Scandinavian Potato Salad Cooking Directions
8 large new white potatoes
1 cup sour cream
1/2 cup red onion, chopped
1/3 cup fresh dill or 1/8 cup dried dill
salt and pepper
Scrub potatoes, don't peel, quarter potatoes and drop into a kettle of cold water. Bring to a boil and cook until potatoes are tender but firm about 8 to 10 minutes.
Drain water off, place potatoes into a large mixing bowl. Season with salt and pepper, add sour cream; toss gently. Add chopped red onions and dill. Toss again, chill Scandinavian potato salad in the refrigerator for 2 hours before serving.
This Scandinavian potato salad can be made the day before.
