Pickled Beet And Cabbage Slaw Directions
1 - 8 ounce jar or can pickled beets
6 to 8 cups shredded green cabbage { about 1 medium head of cabbage }
1 large green pepper
1 1/4 cups mayonnaise or fat free mayonnaise or salad dressing
2 tablespoons pickled beet juice
Drain off pickled beets, reserving 2 tablespoons pickled beet juice; slice pickled beets into thin julienne style strips.
In a food processor, use the slicing blade to slice the cabbage, then slice green pepper.
In a large bowl, toss together pickled beets, cabbage and green peppers; cover and chill.
At serving time, prepare dressing by blending mayonnaise and reserved beet juice; toss dressing lightly with cabbage mixture. Transfer Pickled Beet And Cabbage Slaw into a serving bowl.
