2 medium carrots, peeled
2 medium red bell peppers
5 green onions
2 - one pound pork tenderloins
2 tablespoons toasted sesame oil
2 tablespoons Asian Seasoning mix
4 packages oriental flavor ramen noodles
1 tablespoon vegetable oil
4 cups water
Cut carrots into julienne strips. Cut red bell peppers lengthwise into 1/4 inch strips. Slice green onions; saving the tops for garnish.
Trim fat from the pork tenderloins. Slice pork into 1/4 inch thick strips. Combine pork, sesame oil, seasoning mix and two of the ramen seasoning packets in a bowl, mix well.
Add vegetable oil to the skillet over medium until oil is hot. Add half of the pork, cook and stir 2 to 3 minutes until brown; remove pork from the skillet. Repeat with the remaining pork. Set pork aside.
Add carrots and bell pepper to skillet. Cook 1 to 2 minutes until crisp tender. Add water and remaining ramen seasoning packets; stir to loosen browned bits off the bottom of the skillet. Add the ramen noodles and white ends of the green onions. Cover; bring to a boil and boil 4 to 5 minutes or until noodles are softened. Add cooked pork; stir to break apart noodles. Remove skillet from the heat; let stand, covered 2 minutes. Garnish with reserved green onion tops.
