2 ~ 4 ounce salmon fillets with the skin on
2 1/2 teaspoons lemon herb seasoning, divided
1 large fennel bulb, shaved
2/3 cup grapefruit juice
2/3 cup tangerine juice
1 cup grapefruit segments
1 cup tangerine segments
1 ripe avocado, sliced
Preheat your grill. Sprinkle salmon fillets with 1 teaspoon lemon herb seasoning. Place salmon on the grill skin side down. Cook about 8 minutes.
Meanwhile; place shaved fennel in a skillet over medium heat. Add grapefruit and tangerine juice and remaining lemon seasoning. Cook approximately 8 minutes or until fennel is soft and the juices have reduced to half. Add grapefruit and tangerine segments. Keep skillet on the heat just long enough to heat segments.
Place a bed of fennel on each plate. Surround with grapefruit and tangerine segments along with sliced avocado. Top with grilled salmon fillets. Pour remaining cooked juice in the skillet over each salmon fillet.
