Salmon Steaks with Radish ~Yogurt Sauce Directions
The radish and yogurt sauce is a fine complement to the richness of the broiled salmon steaks.

4 - 5 ounce salmon steaks
2 cups plain low-fat yogurt
3 cups green onions, fine chopped
1 bunch radishes, about 10, trimmed and chopped
3 tablespoons prepared horseradish
1/4 teaspoon ground cumin
1/4 teaspoon black pepper
2 teaspoons lemon juice
2 teaspoons olive oil or vegetable oil
lemon wedges or garnish
Preheat the broiler and spray the broiler pan with cooking spray. In a medium mixing bowl, combine the yogurt, green onions, radishes, horseradish, cumin and 1/8 teaspoon of the pepper; mix well and set sauce aside.
Combine the lemon juice, olive oil and remaining pepper, brush the mixture over both sides of the salmon steaks. Place the salmon steaks on the broiler pan and broil 5 inches from the heat for 3 to 4 minutes on each side or until the salmon is flaky when cut near the center.
Serve salmon steaks on a warm plate, spoon yogurt sauce over the salmon steaks and garnish with the lemon wedges.
