Orange Curd Recipe

Pan size: 2 quart sauce pan
Temp: medium heat
Cooking time: about 8 minutes
Servings:1 1/2 cups

Cooking Directions

3/4 cup sugar
2 tablespoons cornstarch
3 teaspoons finely shredded orange peel
3/4 cup orange juice
3/4 cup water
6 egg yolks, beaten
1/2 cup butter or margarine, cut up

In a saucepan stir together sugar and cornstarch. Stir in orange peel, orange juice and water. Cook and stir over medium heat until thickened and bubbly.

Stir half of the orange mixture into the egg yolks. Return egg mixture to the saucepan. Cook, stirring constantly, over medium heat until orange mixture comes to a gentle boil. Cook and stir for 2 minutes more. Add butter, stir until butters melted. Remove orange curd from heat. Cover surface with plastic wrap. Chill 1 hour.
