Oatmeal Cranberry White Chocolate Chip Baking Directions
2/3 cup margarine or butter, softened
2/3 cup packed brown sugar
2 eggs
1 1/2 cups flour
1 1/2 cups old fashioned oats
1 teaspoon baking soda
dash of salt
2/3 cup craisins
1 cup white chocolate chips or chunks
Preheat oven. In a medium mixing bowl and using a electric mixer, beat margarine or butter and sugar together until light and fluffy. Add eggs, mix well.
In a separate bowl, sift together flour, baking soda and salt, stir in oats. Add to butter mixture, mixing well. Stir in craisins and white chocolate chips.
Drop by rounded teaspoons or medium ice cream scoop onto a ungreased cookie sheet. Bake for 10 to 12 minutes or until golden brown. Cool oatmeal cranberry white chocolate cookies on a wire rack.
