4 cups shredded unpeeled zucchini - removing large seeds.
1/2 teaspoon salt
2 eggs
1/2 cup grated Italian seasoned parmesan cheese
2 cups shredded mozzarella
1 pound ground beef
1/2 cup onion - chopped
1/2 cup celery - chopped
1 - 15 ounce can Italian tomato sauce
1 green pepper - chopped
Preheat your oven. Place shredded zucchini in a strainer with salt. Let the zucchini set for 10 minutes. Gently squeeze out the moisture. Stir together zucchini with the eggs, parmesan cheese and 1 cup mozzarella cheese. Press zucchini mixture into your greased baking dish. Bake uncovered for 20 minutes.
Meanwhile, cook the ground beef with the onion over medium heat until the ground beef is done; drain off the fat. Add the tomato sauce; spoon over zucchini mixture. Sprinkle with the remaining cheese and green pepper. Bake casserole for 20 minutes longer or until heated through.
