Easy Crustless Spinach Mini Quiche Recipe

Temp: 350°F degrees
Cooking time: 20 minutes
Servings: 24 mini spinach quiches

Crustless Spinach Mini Quiche Cooking Directions
6 ounces grated cheddar cheese
3 tablespoons flour
3 eggs, beaten until fluffy
2/3 cup mayonnaise
1 - 10 ounce package chopped frozen spinach, thawed, well drained
8 slices bacon, cooked, crumbled
4 ounce can chopped mushrooms, drained
1/2 teaspoon Greek all-purpose seasoning
Dash of freshly ground pepper
2 tablespoons chopped black olives
Toss cheese with flour. Add remaining ingredients; mix well. Spray miniature muffin tins with cooking spray very well. Fill with mixture.
Pre heat oven to 350 degrees. Bake spinach mini quiches for 20 minutes or until set. Makes about 24.
